How to grow Jerusalem Artichoke in Australia

Plant tubers in full sun in almost any soil, ideally in a dedicated bed as the tall stems and spreading tubers can take over. Water during dry spells for a heavier crop, and stake or group plants so they support each other in wind.

Dig the tubers after the tops die down. Fork them up carefully, take what you need and leave some in the soil to crop again.

Storage

Cool dry place in paper bag for 2 to 3 weeks. Fridge for 1 month.
