Harvest and storage
Harvest tip
Harvest when the caps flatten out but the edges are still slightly curled under, before they go wavy. Twist or cut the whole cluster at the base, and more flushes follow.
Storage
Fridge in paper bag for 5 to 7 days. Dry or freeze for longer storage.
